Question 1 Report

Read the information below about MetroMeal, a growing chain of low-price restaurants. An inspection found that a new kitchen assistant had not received food-safety training. The assistant had stored cooked chicken above uncovered salad and had not washed hands after handling raw chicken. The manager wants to increase profit by reducing wasted food, but also wants the business to comply with legislation.

(a) Identify the legislation most relevant to the storage of food in this restaurant. [1]
(b) Explain one reason why the manager should provide food-hygiene training for new employees. [2]
(c) Explain two possible costs to MetroMeal if it fails to follow food-safety legislation. [4]
(d) Explain whether better staff training is likely to benefit MetroMeal more than simply reducing the price of its meals. [6]

Answer Details

(a) The relevant legislation is food safety legislation or food hygiene legislation [1]. The unsafe storage and handling of raw and cooked food create a contamination risk.

(b) Food-hygiene training teaches employees safe food handling and storage procedures [1]. This reduces the risk that contaminated food is sold to customers [1].

(c) Two explained costs are required [4]. For example:

  • Customers may become ill, leading to compensation claims [1] and loss of sales or reputation [1].
  • The business may receive a fine [1], causing profit to fall [1].

Temporary closure and lost revenue is another valid cost-and-consequence chain.

(d) Better staff training is likely to benefit MetroMeal more in the long term. Training reduces unsafe handling, food contamination and food waste [1]. It helps the restaurant comply with legislation and avoid fines or closure [1]. Safe food also protects its reputation, making customers more likely to return and recommend the restaurants [1]. Reducing meal prices may attract more customers [1], but it reduces the profit earned on each meal [1] and does not correct unsafe production methods [1]. Therefore, training should be the priority; a small price reduction could be considered later if competitors charge less [1].

Exam focus: In a six-mark judgement, develop both sides, then give a supported conclusion linked to the business's situation.
