Maltose is broken down to glucose by the enzyme maltase, found on the membranes lining the small intestine, so maltase completes the digestion into an absorbable sugar. Amylase produces maltose from starch but does not act on maltose, lipase acts on fats and pepsin on protein, so none of those finishes maltose digestion; maltase does.
