Fig. 1 shows a glucose sensor trace for a cyclist who ate a meal containing bread and fruit at 08:00. The sensor measures glucose concentration in the blood every few minutes. The cyclist is healthy and did not eat again before 11:00. The rise after the meal is followed by a return towards the starting concentration. This control prevents body cells from being exposed to a very high glucose concentration for a long time.
