Fig. 1 shows a saucepan with a copper layer bonded into its steel base. Explain why the two metals are combined in this way. [2]
Copper and stainless steel are combined because each supplies a property the other lacks. Copper is a much better thermal conductor than steel, so the copper layer spreads heat evenly over the saucepan base and reduces hot spots [1]. Stainless steel provides a durable, hygienic and non-reactive cooking surface, which copper alone would not provide as effectively [1].
The important idea is that the bonded base combines even heating with a practical food-contact surface.
