[2] One mark each (max 2): - White bread (1) - Wholemeal bread (1) - Soda bread (1) - Rolls (1) - Naan bread (1) - Focaccia (1) (b) State the function of yeast in bread making. [2] - Yeast is a biological raising agent that produces carbon dioxide gas (1) when it ferments the sugar in the dough, which causes the bread to rise (1). (c) Explain why the dough must be kneaded. [2] - Kneading stretches and develops the gluten in the flour (1), creating a strong, elastic network that traps the carbon dioxide gas and allows the bread to rise evenly (1). (d) Describe the stages of making basic white bread. [9] One mark for each stage (max 9): - Sift the flour and salt into a large mixing bowl (1) - Add the yeast and sugar (1) - Add warm water and mix to form a soft dough (1) - Turn out onto a floured surface and knead for about 10 minutes until smooth and elastic (1) - Place the dough in an oiled bowl, cover with a damp cloth or cling film (1) - Leave in a warm place to rise until doubled in size (proving) (1) - Knock back the dough to remove large air bubbles (1) - Shape the dough and place in a greased tin or on a baking tray (1) - Allow to prove again for 15-20 minutes, then bake in a hot oven until golden and hollow-sounding when tapped on the base (1)
