Protein digestion begins in the stomach, where the enzyme protease works in the acidic conditions created by hydrochloric acid. Each enzyme has an optimum pH, and the stomach protease is shaped to work best in acid. Amylase and maltase act on carbohydrates, not protein, and lipase acts on fat; and protein is not digested in alkaline or neutral conditions in the stomach. So protein digestion in the stomach involves protease working in acidic conditions.
