The table shows reaction rate at increasing substrate concentrations with a fixed amount of enzyme. Why does the rate stop increasing at high concentrations?
With a fixed amount of enzyme there is a limited number of active sites. As substrate concentration rises the rate increases until every active site is occupied at any moment; beyond that point (rate steady at 12) extra substrate cannot be used, so the rate stops rising. This plateau is not due to a temperature or pH change or to denaturation, but to all the active sites being fully occupied.
