A technician is comparing the action of amylase at different temperatures before making a medicine for patients whose pancreas produces too little enzyme. Fig. 1 shows the apparatus for one test tube. Equal volumes of starch suspension and amylase are mixed, then drops are removed onto iodine in a spotting tile. The water bath keeps the temperature constant. A student records the time when the iodine no longer becomes blue-black. All test tubes contain the same pH buffer and the same volume of enzyme.
