They increase the surface area of the small intestine, which allows for more efficient absorption of nutrients from food. The villi are covered in microvilli, which are even smaller projections that further increase the surface area for absorption. The increased surface area provided by the villi and microvilli allows for a greater amount of nutrients to be absorbed into the bloodstream.
