The gas given off when ethanol reacts with sodium is hydrogen. This is because sodium is a more reactive metal than hydrogen and it will displace the hydrogen in ethanol, forming sodium ethoxide and hydrogen gas. The reaction can be represented as follows: C2H5OH + Na → C2H5ONa + H2 So, during this reaction, hydrogen gas is evolved as a product.
